S'il ne devait y avoir qu'une spécialité gastronomique à retenir au Chili ce serait sans doute le pisco. Ce fameux alcool dont les péruvins se disputent également la parenté, se boit avec du coca chez les étudiants (le piscola) ou "sour" pour les palais plus avertis. La recette ? Quasi la même que celle du vin puisque le raisin reste l'ingrédient principal, sauf qu'il est traîté différemment.
