Saint-Hilaire owes its fame to two things - its magnificent Abbey (where you can find some great master carvings of Cabestany) and the most famous sparkling wine of Southern France: "The Blanquette de Limoux". Strolling through its small, narrow streets is a delight and, if you can, try to go to some of the shops where you can taste the oldest sparkling wine in the world, with the permission of champagne ;-).
