Hoy hemos llegado a Roncesvalles, para mañana ir (juntos, pero cada uno por su lado) hasta Santiago, como manda la tradición, siguiendo la estela de tantas y tantas personas que han viajado por este mismo camino, para comenzar a andar por uno totalmente nuevo para nosotros, el camino hacia la libertad . El camino por segunda vez, aunque esta vez es diferente, tan diferente. Nuestras vidas están cambiando día a día, y la esperanza de lo desconocido nos tiene como niños chicos. Hace tan solo unos meses (que fue, cuando comenzó este camino por primera vez) hubiera sido impensable encontrarnos (como lo hacemos ahora), libres de un negocio (que conllevaba una vida), que había sido nuestro camino los últimos 18 años. Pero por fin, ese duro viaje está terminando día a día, y todo, gracias la crisis (parece mentira). Santa María de Roncesvalles, antiguo hospital de peregrinos, es uno de los lugares más emblemáticos de la Europa occidental, ya que es el paso natural (desde tiempos remotos) del Pirineo, aquí se recibía, acogía y curaba a los peregrinos exhaustos que venían de lejos, en lo que es hoy uno de los albergues más grandes de Europa, “La Colegiata” ; por lo que a pesar de sus 29 habitantes censados, este pequeño lugar es mundialmente conocido. El pueblo es un paseo demasiado corto, así que salimos deshaciendo los pasos de los últimos que acaban de llegar, y nos adentramos de pronto en un hermoso camino, algo embarrado por la últimas gotas que nos ha dejado éste agradable frescor en la tarde. De pronto el verde húmedo de las hojas nos hace compañía durante todo el recorrido, la primavera pone el color que le faltaba al cuadro, y los insectos y las aves toman vida en derredor. El entorno de Roncesvalles es idílico para los amantes de la naturaleza, y a pesar de ser un pueblo tan pequeño, debido a la gran afluencia de gente que hasta aquí trae el camino, podemos encontrar un par de hostales, y dos albergues, el más famosos, el albergue de la colegiata (que es el antiguo hospital del siglo XIV, también alberga un museo en su interior), el otro albergue (también hospital del siglo XIX reconvertido), es el albergue de la Juventud. Un buen lugar para comenzar el camino, para los que cruzan el pirineo, o para los amantes de la naturaleza.

Estuvimos visitando este pueblecito de navarra, famoso por muchos por el camino de santiago y la verdad es que a mi me sorprendió muchisimo, pues esperaba algo mas grande... En mi camino de Santiago lo empece en Tui, y a pesar de ser un pueblo pequeño, tenia tiendas, hoteles bares, de todo... Y la verdad es que en este nada, la colegiata de roncesvalles, con una iglesia muy bonita por dentro, el albergue de peregrinos y dos bares... Pero es bueno saberlo, para cuando empiece el camino francés completo en St jean pied de port y pase por aquí y sepa lo que hay...

Este verano me decidi a empezar el camino, hacer un par de etapas, ver como de largas, de complicadas... Ver como está organizado y demás. Empecé en Roncesvalle, segunda etapa del Camino francés, (la etapa de S. Joan Pied du Port me la salté), hasta Larrasoaña y de allí la tercera etapa a Pamplona. Si llegas a Roncesvalle por la tarde puedes disfrutar de una toma de contacto con el ambiente del camino en el albergue y en la misa y cena del Peregrino, la misa sule ser a las 20.00 y a las 20.30 en uno de los establecimientos hosteleros que hay se da una cena que debe ser reservda con anterioridad y cuesta 9€ consta de un primero, un segundo postre pan y bebida. En el comedor hay mesas de unas 8 y 10 personas y te van colocando según llegas asÍ que conoces a gente que comienza o continua el camino y cada uno cuenta su experiencia, hay gente que repite y que quizá este sea su segundo o tercer camino, como en cualquier sitio puedes encontrar de tod pero la verdad es que suele haber buen amiente y pasas un rato agradable. No olvideis ir a la oficina antes de las 19.00 a sellar vuestra credencial.

Al pan, pan y al vino, vino Estábamos deseando que llegase el puente de Todos los Santos para salir de Madrid y hacer otra de las tantas escapadas que hacemos habitualmente. Habíamos escogido la localidad de Pamplona, de las últimas que que no conocíamos del Norte de España y teníamos reservadas dos habitaciones comunicadas ( siempre vamos juntos mi mujer, mis dos hijos y yo) en el Hotel Palacio Castillo de Gorraiz Golf y Spá ****, un lugar ideal, tranquilo, espectacular y muy recomendable. Aunque se había pronosticado lluvia y frío, tuvimos mucha suerte y la lluvia solo apareció en la noche del sábado. El viernes disfrutamos de las calles de Iruña , su mítico recorrido del encierro y degustamos de los sabrosos pintxos de Otano, Gaucho... El sábado por la mañana nos acercamos a visitar el monasterio de Leyre, su cripta e iglesia, ¡que pena que la misa cantada fuese por la tarde!. Desde allí, nos acercamos a Roncesvalles... La carretera espectacular! Y tras darnos una vuelta y empaparnos de historia, se hizo la hora de comer... Como seguidor y usuario de trip advisor, busqué en la zona el local con mejores opiniones de la zona para ir a comer.... así fué como acabamos en el Asador Aritza, a escasos kilómetro y medio de Roncesvalles. Estaba en la posición 1 de 2. Es un local con un comedor pequeño, lleno de " turistas" como nosotros, con forros polares y botas de trekking... Nadie impresionaba ser de la zona. La carta escasa y con algunos platos no disponibles (pochas) que sustituían por alubias rojas y unas palomas que habían cazado. Nos atendió una camarera rubia, con coleta y le preguntamos qué platos nos aconsejaba. Nos recomendó tomar paté casero y la ensalada de la casa como entrantes. El paté servido en dos rodajas y con una docena de panecillos cuadrados de canapé. La ensalada, multicolor, buena de sabor, con nueces, grosellas, pasas, tomate en dados... De segundo habíamos pedido bacalao ajoarriero y la especialidad, que era una chuleta de vaca, que queríamos compartir pues el pequeño quería comer algo de carne. Sería una chuleta más grande que la ración habitual pues era para varios. Le sugerimos pedir pato, pero nos recomendó no pedir más y esperar a ver si no nos quedábamos satisfechos. Llega el bacalao en un plato hondo y estrecho que sólo ocupaba el fondo de éste: no más de 5-6 cucharadas soperas de volumen!!... Eso es un plato principal para un adulto? A continuación llega la chuleta, solitaria en una fuente ( nunca antes me habían presentado una chuleta sin guarnición alguna, unas patatitas, un poco de ensalada, verdura...) La chuleta, con buen sabor, sabrosa, en su punto pero de dicha pieza más de 2/3 era hueso y grasa. Pedimos unas patatas para los niños y nos traen cuatro patatas panaderas en un platito ( que no nos cobraron) Como de la chuleta comeríamos unos 300 gr, a pesar del engaño manifiesto, y porque los niños apenas habían comido nada, pedimos otra chuleta. Le mostramos el HUESO de la chuleta a la camarera y le pedimos otra que no fuese igual. Apurada, nos dió la razón y vino con otra chuleta sin asar aún ( ésta si nos la enseñaron antes) y con el recado de la cocina que " cuanto más hueso mejor sabor tienen". Esta última tenía también hueso, pero se moderaron al biselar el corte. A los postres no llegamos, vimos cuajadas "caseras" en vasos de barro y pedimos la cuenta... Total, lo referido más media botella de vino de la tierra... 114€, de los cuales 68€ eran de 1840 gr de chuleta, creemos que no cominos más de 600 gr de carne magra...SIN PALABRAS!!... Por supuesto, no llevábamos una balanza encima para pesar el hueso, es más deberían habernos pesado la carne ( pues la venden al peso) delante de nosotros... como se hace con el pescado, marisco... Tras escribir una opinión tan válida como cierta en Trip advisor, recibo un mensaje privado de los dueños hablándome de qué sí éramos cuatro, que si no se lo que es una chuleta... Creo que queda claro que éramos cuatro ( pero dos adultos y dos niños) y que la cantidad de comida solicitada fue la que nos aconsejó la camarera. Cuando pides chuleta , el hueso y grasa va incluida, claro, pero hay dos maneras de hacer las cosas: corte proporcionado hueso y carne magra ó biselando el corte con 2/3 hueso y 1/3 carne...bien o engañando!! Me habla de la clandestinidad de la red, me parece totalmente lícito emitir la opinión que he escrito ( ya me gustaría no haberlo hecho), pero me parece más clandestino el permanecer en la cocina y enviar a la camarera con la frase " está mejor cuanto más hueso " que dar la cara ante unos clientes no satisfechos. La respuesta de los dueños no se atiene a la realidad y me llama la atención que pocas horas después de haberse publicado mi opinión, una colaboradora de Pamplona halague tal establecimiento.... Huele !! Estos establecimientos viven de los visitantes de la zona, no de sus vecinos ( censo 2012 de Burguete: 272 habitantes) y que muy seguramente, como nos ocurre a nosotros, " una y no más, Santo Tomás". Sólo deseo para los futuros visitantes, que aumenté la oferta gastronómica en la zona y que estos "profesionales" cambien o desaparezcan. Por ultimo, volveremos, aunque sólo sea por oír misa en gregoriano, pero no me busquéis en Asador Aritza, que seguro, seguro que con una ha sido suficiente.
