To enjoy the true essence of Liege, you should try the city's drink, Peket - brandy made from juniper berries. Any excuse to go to the Maison du Peket is a good excuse, and you can relax and enjoy this beverage. The restaurant is located in the historic centre, behind the Town Hall, in an old eighteenth-century building that's been fully restored. Highly recommended.
