He creates dishes with a unique blend of flavors and textures, using the excellent local products for his classic Mediterranean cuisine. Here is a sample of the menu: pigeon with foie gras and red fruit consommé, lobster ravioli, fish fillet of the day, cockle risotto with shrimp emulsion, rack of lamb with cous cous, vegetables, thyme and cumin sauce and pork with rhubarb puree and zucchini with balsamic vinegar.
