The best dishes are: Jets d'houblon. The hot and cold scallops with foie gras, truffles, salsify and shellfish sauce. The lobster enhanced by the presence of Smoked Eel, the bite of the Queen (sot l'y-laisse), eggplant and curry. A good back of a turbot four or five kilos which is on a bed of spinach and enriched with lobster béarnaise - it warms the palette with its intensity and juice.
