Sandwiches like mother made

El Porron Canalla is a new eatery that opened up last summer in the once-desolate streets behind Madrid’s Plaza de la Luna, an area which is currently undergoing something of a Renaissance as new boutiques and concept restaurants are sprouting up each week. The idea behind El Porron Canalla is simple: sandwiches like mom made and wine served in a “porron,” a traditional Spanish utensil that looks like a decanter but with a long narrow spout so you can pour a thin stream of wine into your mouth without actually touching the glass (I guess it’s meant to be shared).

The place is decidedly casual, with long tables and benches to share and a bar to place your orders. The sandwiches are all traditional Spanish favorites like adobo-marinated pork loin with roasted peppers and cheese, homemade sausages, or cured meats, but the ingredients are of the highest quality and there are some interesting twists like matching fennel with Spanish salchichon (a salami-type cured meat) which bring these familiar flavors to a new level. You can chose your sandwich to come on a baguette or a fluffy bun called a mollete.
