Meat and eggs ... donkey!
In all the markets I visited China, there is an area dedicated exclusively to restaurants where you can eat very cheap (about 3 or 4 €) for a worthy dish.There are many food stalls. Dunhuang's case deserves special mention because purely Asian food begins to acquire Muslim traits, by the proximity of Xinjiang and Uighur. Besides that, it is one of the most visited cities of the legendary Silk Road, which also gives tourism gastronomic influences. Even so, tourism is predominantly national. Remarkable is the omnipresence of lamb and donkey. For us it is nothing new to eat testicles, but in Spain, to my knowledge, they are bull, and we are not offered the "pak" full of genitals.
Pay attention to the pictures because donkey genitals are the star dish. Closely followed by the tongue (of various animals) in sauce - hope it's not "their own sauce." We tried the donkey meat, normal meat, and liked it but it was dry, but I guess that's more a matter of the kitchen itself. Most things taste the same as they use sour or soy sauce with the herbs that they put in everything (lemon grass and cilantro), so the meat is not what you know, but everything tastes the same.
