Pork buns in Anton Martin!

Excellent

Buns & Bones is a relatively new spot in Madrid’s growing (and uber-trendy) street food scene. Located in an old fish monger’s stall in the classic Mercado de Anton Martin, Buns & Bones serves simple and informal Asian-fusion bites with a creative touch and market-fresh ingredients.

As you can guess by the name, the menu is broken down into, well…buns and bones! The buns are bao, fluffy steamed buns popular in China and Vietnam stuffed with fillings like short ribs marinated in Chinese five-spice, Peking-style duck, or slow-cooked pork belly. There are also some buns with creative Western flavors like crab with romesco sauce or tempura-fried shrimp. The bones part of the menu is a selection of grilled meats like Argentinean churrasco, porterhouse steaks, ribs, and fresh lobster cooked on the seductive charcoal you see in the window as you approach.


We got the Peking duck bun and it was basically a perfect bite. All the flavors of classic Peking duck condensed into a few tasty mouthfuls, with the perfect balance of crispy skin, refreshing cucumber and savory oyster sauce. Next, we got the grilled “chuletón” (porterhouse steak) which was delicious, but perhaps a bit smaller that we expected.

Another thing which makes Buns & Bones unique is that it’s completely open-air in the warmer months of the year. The walls open up, the breeze blows through, and you can enjoy a few tasty buns and a few glasses of wine while watching the neighborhood come alive in the evening. The Mercado de Anton Martin is quickly become one of Madrid’s better culinary destinations, and Buns & Bones definitely makes a fine addition.
