The history of cava production in Almendralejo is an adventure. It begins in the 1980’s and was started by three entrepreneurs including Marcelino Díaz, a man passionate about his native lands and even more passionate about his wines. He created Puerta Palma Cava to everyone’s surprise. He told us his exciting story in person as we learned the secrets of the process behind his cava: the selection of the grapes, the influence of the aging barrels and yeast, the importance of bottling at the correct time, and the clarification of the cava…everything up to the final labeling of the bottles.
Curiously, they serve their cava in hollowed-out gourds rather than traditional stemmed glasses.
