The Plaza 9 de Julio in Cachi is surrounded by a stone cairn that harks back to the ancestral meetinghouse of the Chicoanas Indians. It has triple arched entries and is incredibly beautiful. Around this square you can find cafes, restaurants and small dining rooms. I went to one of them and I tried, for the first time in my life, many years ago, humita which is a kind of dip made of corn, tamales (a kind of pancake made from corn), the soup, a spectacular stew made of white corn, chickpeas, onion, garlic, squash, diced pork and beef and spicy blend that makes it very tasty. Needless to say, I also tried the pies, bits of bef and pork meat, fried in fat.
